Winter slaw with pears and pickled ginger


Hooray for sunny days and fresh winter salads! This substantial and delicious slaw is everything – colourful, crunchy, sweet, salty…did I mention colourful? Great alongside fishcakes, grilled chicken or pork schnitzels.

Serves 4

There’s a fair bit of slicing here – if you have a mandolin it will speed things along unless you are like me and appreciate the opportunity to brush up on your knife skills ;) 


  • ½ a small red cabbage, cored and finely shredded
  • ½ a red pepper, finely slices
  • 1 medium carrot, peeled and grated or julienned
  • 3 baby beetroots or 1 large beetroot (mixed colours if possible) finely sliced
  • ½ a small red onion, peeled and finely sliced
  • 1 dried pear, sliced fine
  • 3-4 large pieces of pickled ginger, finely sliced
  • 1 tsp toasted sesame seeds
  • 1 tsp nigella seeds (kalonji) – if you don’t have just double up on normal


  • 40ml ponzu sauce (or 30ml soy sauce and 10m lemon/lime juice)
  • 20ml sunflower oil

Combine all salad ingredients and keep covered and chilled until ready to serve. Add dressing at the last minute only.
